Dispatches on Italian coffee

Ristretto Report

Espresso without the ceremony — what the bar in Naples actually does differently, and which of it survives your kitchen.

The premise

  1. Italy is not one coffee culture. Naples, Turin and Trieste disagree with each other more than they disagree with you.
  2. Most "rules" are habits. Some of them matter enormously. Most of them are what one bar happened to do, repeated until it sounded like law.
  3. Moka pots deserve better. The most-owned and worst-explained brewer in the world.
